Right-sided player Coleman, 22, has become a regular for the Toffees this season, scoring five goals.
Nigeria striker Anichebe, also 22, is back in the first-team frame following a pre-season knee injury.
He started the 2-2 draw against local rivals Liverpool last weekend and was instrumental in setting up the second Everton goal for Jermaine Beckford.
The versatile Anichebe’s new contract ends speculation linking him with a move from the Everton, with his previous deal set to expire in the summer.
Republic of Ireland Under-21 international Coleman signed a new contract in May 2010 but his progress this term has been impressive enough to see him handed a new deal.
He has made 22 appearances so far this season, while Anichebe has had three starts and three substitute appearances.
“I am here fulfil the talent that Stabaek saw before singing me and I will work hard to make the fans happy with goals.”
The Gabon international is expected to make his debut on 20 March when the league in Norway starts.
Ondo scored 33 goals in 55 appearances for Grindavik in his two-year stay in Iceland.
